Sachertorte

One chocolate cake started a legal war that lasted three decades and made Vienna's most famous hotel the center of a delicious scandal.

The world's most famous chocolate cake was invented by a 16 year old apprentice who had no idea what he was doing. You're standing across from Hotel Sacher on Philharmonikerstrasse, directly opposite the Vienna State Opera. The story begins in 1832 at Prince Metternich's palace kitchen. The Austrian Chancellor ordered his staff to create a special dessert for high society guests. Hours before the dinner, the head chef fell sick.

Franz Sacher was just an apprentice, in his second year of training. Metternich reportedly said, "Let there be no shame on me tonight." The teenager rolled up his sleeves and threw together what he had: chocolate sponge, apricot jam, glossy chocolate glaze. The guests loved it.

Fast forward to 1876. Franz's son Eduard opened this hotel right here and made the cake the star of the menu. But then things got complicated. The family eventually sold the recipe to Demel, a rival pastry shop down the street, and a legal war erupted over who could call theirs "original." Courts didn't settle it until 1963. Hotel Sacher won.

Here's what most tourists miss: the original recipe uses unusually high butter content. That meant the cake never needed refrigeration, even in the 1800s. The exact recipe is still a closely guarded secret, made fresh inside this building every single day.
