Right here, just steps from the Jerónimos Monastery, a blue tiled bakery guards one of the world's most protected culinary secrets. Only three people know the complete recipe for pastéis de Belém, the original custard tarts that have been made the exact same way since 1837. These golden pastries exist because of hardship. When Portugal's 1820 Liberal Revolution forced monasteries to close in 1834, the monks at Jerónimos faced an uncertain future. For years, they had been making these egg custard tarts, using surplus yolks left over from starching their white habits with egg whites.

To survive, they sold their recipe to a nearby sugar refinery. Three years later, production began in buildings attached to the refinery, and Fábrica de Pastéis de Belém was born. The recipe has never changed. Master bakers work in a locked room called the "Oficina do Segredo" or Secret Shop, signing confidentiality agreements before learning the formula. Every day, over 20,000 tarts emerge from ovens heated to 400 degrees Celsius, each one producing that signature caramelized, crispy shell filled with creamy custard. The same taste the monks created nearly 200 years ago.
