That golden tart you just tasted has a secret older than most countries. Before the 18th century, Catholic monks at the Jerónimos Monastery here in Belém faced a curious problem: they used massive amounts of egg whites to starch their religious habits, leaving mountains of yolks behind. What started as kitchen practicality became Portugal's sweetest legacy.

The monks created a custard filling wrapped in crispy pastry, selling these treats to visitors who arrived by steamboat to see the grand monastery and nearby tower. When the Liberal Revolution of 1820 swept through Portugal, religious orders faced extinction. By 1834, monasteries were forced to close. The Jerónimos monks, desperate for survival, sold their secret recipe to a sugar refinery next door. In 1837, that refinery became the Fábrica de Pastéis de Belém.

The original recipe remains locked away in a room called the Oficina do Segredo, known only to three master bakers who sign oaths of secrecy. The bakery produces over 20,000 handmade tarts daily, each following the exact formula perfected centuries ago behind monastery walls.
